No Bake Oreo Cheesecake

Welcome to one of my first editors, joint with me in this blog.

She loves to bake, eat desserts and now blog about them.  Please find below an awesome recipe for an Oreo Cheesecake.

No Bake Oreo Cheesecake

Cheesecakes are my go to dish to take over to a dinner party. My signature dessert when we have guests over. And the perfect treat when it’s a PJs & Movies type of weekend (ladies)…and the best thing about it is – no eggs & no bake.

Preparation time over 2 hours

Cooking time less than 10 mins

Serves 8

Dietary V

100g/3½oz unsalted butter

250g/8¾oz Oreo biscuits, crushed

600g/1lb 5oz cream cheese

100ml/3½oz icing sugar

1 teaspoon vanilla extract

300ml/10½oz double cream, whipped

100g/3½oz grated chocolate

To garnish

4-6 crushed Oreos

Melt the butter in a pan and add the crushed Oreo biscuits. Mix well until the biscuits have absorbed all the butter.

Remove from the heat and press into the bottom of a lined 18cm/7in spring form tin. Place in the refrigerator and allow to set for one hour.

Meanwhile, prepare the filling. Lightly whip the cream cheese then beat in the icing sugar.

In another mixing bowl whisk together the cream and vanilla extract until soft peaks form.

Fold the whipped cream into the cream cheese (be sure not to over work). When smooth, spoon evenly onto the biscuits.

Refrigerate and allow to set for a further two hours. Once set, remove and decorate with the crushed Oreos on top. Serve.

Blitz the biscuits in a food processor for a fine crumb base

Decorate the cake with the crushed Oreos just before serving. That way the biscuits will keep their crunch – I find in the fridge they become soft and stale.
