The second part to the yummy cheesecake, this time for adults for those cheeky weekend treats! Written by my lovely editor joint in this blog with me.
This smooth and creamy cheesecake is the perfect treat for adults
Preparation time: over 2 hours
Cooking time: less than 10 mins
100g/3½oz unsalted butter
250g/8¾oz digestive biscuits, crushed
600g/1lb 5oz cream cheese
25ml/1fl oz Baileys or other Irish cream liqueur
1 teaspoon vanilla essence
100ml/3½oz icing sugar
300ml/10½oz double cream, whipped
100g/3½oz grated chocolate
To garnish Cocoa powder, to dust
Melt the butter in a pan and add the crushed digestive biscuits. Mix well until the biscuits have absorbed all the butter.
Remove from the heat and press into the bottom of a lined 18cm/7in spring form tin. Place in the refrigerator and allow to set for one hour.
Lightly whip the cream cheese then beat in the Irish cream and icing sugar.
In another mixing bowl whisk together the cream and vanilla extract until soft peaks form.
Fold the whipped cream and grated chocolate into the cream cheese (be sure not to over work). When smooth, spoon evenly onto the biscuits.
Refrigerate and allow to set for a further two hours. Once set, remove and decorate with cocoa powder dusted over the top.
Blitz the digestive biscuits in a food processor for a fine crumb base
To make this a child friendly dessert replace the Baileys with 1/3 vanilla pod. A delicious vanilla cheesecake with a hint of chocolate – something to suit everyone
